I’m not sure if we’ve made this clear yet or not, but I’m really obsessed with cooking, whenever it doesn’t take forever!  l love simple meals that you can dress up and make a little gourmet, without the time that that typically takes!  This meal is one of those meals for me – it takes two pans but neither have to be heavily watched!  Sweet relief! I can tidy up as I’m cooking and that makes me one happy camper.  I hope y’all love this meal as much as I do! Happy Thursday, newlyweds!

Ingredients

One box of Penne – Salt – 1lb. Shrimp – 1/2 a lemon (squeezed) – 1/2 cup of spinach – 1/4 cup of basil – a red onion halved + diced – 3 cloves garlic – ~3 tsp red pepper flakes -1 tbsp EVOO – 1/2 cup of fresh parmesan cheese

Directions

  1. Boil water for the penne.  Add a few shakes of salt so that the noodles don’t sit to the pan.  After boiling, add noodles and cook until al dente.
  2. After you start the boiling water, in a separate pan, add EVOO and minced garlic cloves over medium heat for about a minute.  After that, add shrimp, red pepper flakes, basil, red onion and squeeze the lemon over top.  Cook until shrimp is pink (usually 5-8 minutes).  Then add spinach and cook for another 3 minutes.
  3. After that, drain the noodles and prepare the plates! I like to add my shrimp over top of the bed of penne and garnish with an extra bit of basil on top!
  4. Enjoy with something sweet to drink and your cute husband/wife across the table :)
