Spinach Linguini and Shrimp Recipes | #IKnowYouCareWhatWereEating

Hi friends! Good morning! Today I am so excited to bring back the For Newlyweds series with a recipe! One thing you should know about me is that when I cook, I like it to be quick and easy! No one has time for complicated and long meals when you’re more than likely on the run! Plus, if it takes a long time, at least for me, I’m much more likely to say, “oh, we’ll just eat out tonight instead!”  So without further ado, the spinach linguini and shrimp.  This meal takes 15 minutes-ish, depending on the type of linguini you buy, to make it the flavors are so delicious!

What you’ll need:

olive oil
half a lemon
1 can of diced tomatoes
1 pack of spinach linguini (I bought mine from Harris Teeter)
2 cloves of minced garlic
2 cups of frozen, pre-cooked shrimp
fresh basil
fresh parsley

How to cook it:

  1. Bring a pot of water to a boil.  Add salt to avoid having the noodles stick to the pan.  Follow the cooking directions on the package… mine said to cook the pasta for 4-5 minutes after it was boiling.  Any longer than that and the noodles get a little spongy, so make sure you pay attention!
  2. Heat up another pan with a bit of olive oil in the bottom.  Then put all of the other ingredients in a pan, including squeezing the half of lemon juice overtop of the shrimp.  Stir them all together and cook on medium heat for about 5-8 minutes.
  3. After that, just combine the pans and serve! Add salt, pepper, and red pepper flakes to taste.
