Italian Chicken and Pasta Create | LRS Recipes

One thing I love to do is cook.  There’s something about chopping vegetables and combining ingredients that makes me just feel good!  I’ve been meaning to share some of my recipes here for a while now, so I’m glad it’s finally here!  If you want to keep up with all of our food choices… you can check out the hashtag #iknowyoucarewhatwereeating on Instagram!  But for now, here’s the recipe for the chicken!

 

Ingredients:

1 lb. chicken tenderloins

1 pint of grape tomatoes

1/4-1/2 of chopped red onion

1 cup of fresh basil

slices of lemon

fresh garlic

olive oil

penne

salt + pepper to taste

 

Cooking:

1. Boil the penne in water with a pinch of salt in it.  At the same time in a separate pan, cook the chicken in olive oil, with the slices of lemon on top, as well as garlic and pepper.

2. After the chicken is cooked all the way, turn down the skillet to med-low.  Throw the tomatoes and the onions in the pan with the chicken.  From the boiling water from the pasta, take about a half a cup of the starchy pasta water and put it in the pan with chicken concoction.

3.  When the onion are almost clear and the tomatoes can be mashed, mash them.  Then put the basil on top. Cook for 1-2 minutes.
